5-minute Clam Sauce for pasta
1 can minced clams
1-2 tbs extra virgin olive oil
lotsa garlic, minced
1 bunch scallions or 1 small white onion, chopped
1 tsp each oregano, basil
3/4 cup dry white wine
freshly grated parmesan and romano cheese
1 tbs fresh parseley, chopped finely
In small skillet, saute onion and garlic in olive oil till translucent.
Add entire can of clams (with juice), basil, oregano, and wine.
Simmer. Generally done in the time it takes to cook pasta. (At any rate, on ce the pasta's done I eat it regardless.) Sauce is supposed to be thin.
Add parseley and cheese just before serving.
